Ginger Thyme Cough Syrup
- ¾ of a cup of raw honey
- 1 knuckle of minced ginger
- 2 handfuls fresh thyme
- 1 and a ½ cups of water (if you want it to be more liquid, add more water)
Use a pot to combine the thyme with the ginger. Then, add the water and leave the mixture to boil. Simmer it all for 5 or 10 minutes. Some experts advise not to add honey in hot beverages, so leave it to cool down for a while and then add the honey slowly. The syrup should rest from 30 to 60 minutes. In the end, strain it and keep it in glass bottles or jars. Heat the filtered syrup once again. Let it reach a boiling point. Leave it to cool again and transfer it to the bottles or jars again. Keep it in a cool place, like the fridge for example.
In case you’re an adult, take 3-5 tablespoons every day.

Blue & Black Galette
The glory of a galette is in its imperfection, so don’t stress about rolling the (store-bought!) dough into a perfect circle. Aim for rustic, and you’ll end up with gorgeous.
Whole-grain spelt flour adds a subtle nuttiness to these flaky shortcakes. Split them open and fill with mint-flecked strawberries and raspberries and whipped cream sweetened with just a touch of honey.
